Recipe Alert: Chicken Parmesan Crockpot Recipe

I've yet to try out this recipe, but it seems yummy based on the reviews I've seen. :)

Preparation Time: 15 minutes

Ingredients:
- 2 to 4 boneless, skinless chicken breast halves (ie. 1 to 2 chicken breasts)
- 1/2 cup bread crumbs
- 1/4 cup parmesan cheese
- 1/2 teaspoon Italian Seasoning (you'll find this in a small bottle, e.g. Masterfoods, on the shelf together with other bottled herbs and spices)
- 1/4 teaspoon black pepper (I usually skip pepper if the kids are eating)
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 1 beaten egg
- sliced mozzarella cheese
- your favorite jar of pasta sauce

Spread olive oil at the bottom of your crockpot. Have your beaten egg in 1 bowl. Mix breadcrumbs, seasonings and parmesan cheese in another bowl. Dip chicken breasts into egg first, then dip into mixture of breadcrumbs, seasonings and parmesan cheese. Make sure entire chicken breast halves are coated. Place chicken breast pieces at the bottom of the crockpot. Layer 2-3 slices of mozarella cheese on top. Then pour in pasta sauce, covering everything already in crockpot. Cook on low for 6-7 hours or high for 3-4 hours. :)

Serve with your favorite pasta or rice! :)

Recipe Alert: BBQ Crockpot Chicken

The person whom I got this recipe from called it "Fussy Baby Chicken", meaning, if you've got a fussy baby due to teething or whatever, use this recipe!

Preparation Time: Less than 10 minutes.

Ingredients:
- Whole chicken or your favorite chicken parts (I usually use drumsticks, thighs or wings)
- Whole bottle/jar of BBQ sauce (or less depending on how much chicken you use, but the BBQ sauce should cover all the chicken well)

Cook on low all day. That's it!!! It's so easy, it's unbelievable!!! :)

Recipe Alert: Crockpot Lasagna

I never knew lasagna could be cooked in a crockpot. And when I found out lasagna could be cooked in a crockpot, I was skeptical. But I have since cooked crockpot lasagna twice in the last 3 weeks (once with ground beef and once with ground pork) and it is seriously yummy. Even my dad, who is a fantastic cook and doesn't really fancy anything else other than Asian food, gave me 9/10 for the lasagna. So believe me when I say this recipe is worth a go. However, if you prefer your lasagna in nice, neat, rectangular slices, then this recipe is not for you. :P

Preparation Time: 15 minutes

Ingredients:
- 8 lasagna noodles, uncooked
- 1 lb (~450g) ground beef (can use ground pork or chicken if you prefer)
- 3-4 tbsp Italian seasoning, or more if you like a stronger taste of herbs (this is basically a bottle of dried herbs, Masterfoods or other brands would have it)
- 1 jar (about 800ml) spaghetti sauce
- 1/4 cup water
- Cottage cheese (16 oz)
- 2 cups grated mozzarella cheese

Break noodles in half. Place half of the noodles at the bottom of a greased crockpot. (Grease with whatever cooking oil you use at home. Also, I place the noodles in two stacks, side-by-side, so that most of the bottom of the crockpot is covered. But how you place your noodles will also depend on the size and shape of your crockpot) Stir Italian seasoning into meat and spread half the meat over noodles in the crockpot. Over the meat, layer half the sauce and water, and then half the cottage cheese and then half the mozzarella cheese. Repeat layers. Cover and cook on low heat for 4-5 hours. (I prefer my lasagna "drier" so I usually cook on low for 6 hours)

Recipe Alert: Crockpot Chicken 2

Thought I'll post this recipe now since I tried it out yesterday for the first time and it was yummy. We ate it with rice for dinner and leftovers were taken with bread today for lunch.

Preparation Time: 10 minutes

Ingredients:
- 6-8 chicken thighs or 3 breasts (anything you prefer that is boneless)
- 1 can cream of chicken soup
- 1 can water
- 2-3 cloves of garlic
- pepper (optional)

Put all in crockpot and cook for 6-8 hours on low. Stir every now and then, shredding the chicken if you like. Eat with rice, pasta, nachos, tacos, bread, etc.

This is also good for freezing.

Recipe Alert: Crockpot Chicken 1

Since becoming a SAHM after DS was born, I have been compiling simple recipes. Now, when I say simple recipes, I REALLY mean simple recipes. All that I post on my blog will have been tried and tested. :)

Crockpot Chicken 1

Preparation Time: 10 minutes (Really! I kid you not!)

Ingredients:
- Chicken (whole chicken cut up, or thigh fillets, anything - up to you, really)
- Mixed herbs (you can get a bottle of mixed herbs from NTUC or Cold Storage, I think Masterfoods has it. I prefer non-salted, so I can add salt to my preference)
- Salt
- Olive Oil

Place chicken in crockpot, rub with oil, then with salt, and then herbs. Cook on high for about 4 hours, or on low for 7-8 hours.

That's it! You'll get very juicy and tender chicken for dinner.
